Well Pict Sun-Razzy Herb Salad
Serves 4
4 cups spring mix
1/4 cup cilantro leaves
1 generous cup raspberries
3 tablespoons sunflower seeds
1/4 cup crumbled feta cheese
1 lime, juiced thoroughly
1 tablespoon thinly sliced basil leaves
1/2 tablespoon thinly sliced mint leaves
3 tablespoons extra virgin olive oil
1 tablespoon honey
Kosher salt and fresh ground black pepper
In a large salad bowl, add lime juice, fresh basil, mint, extra virgin olive oil, and honey. Stir until well combined. Gently toss in spring mix, cilantro leaves, and raspberries. Season to taste with Kosher salt and freshly ground pepper. Place on four serving salad plates. Sprinkle on toasted sunflower seeds and feta cheese to serve.
