Well Pict Strawberry Basil Relish on Grilled Swordfish
This versatile relish can be used for any type of fish you would like to throw on the grill. Halibut, tuna, grouper or salmon, even chicken would be great.
Serves 4
Grilled Fish:
4- 6 oz. Swordfish filets
Olive oil
Kosher Salt and black pepper to taste
Rub olive oil on swordfish filets and season with salt and pepper. Grill for 2 to 3 minutes on each side for medium rare, or to desired doneness. For thicker filets, you may want to finish them by baking for a few minutes in a preheated 350 degree oven, to make sure they are cooked evenly.
Strawberry Basil Relish:
3 cups strawberries hulled and quartered lengthwise
3 tablespoons fresh basil, sliced thin
4 tablespoons minced onion
2 tablespoons rice vinegar
1 tablespoon extra virgin olive oil
1 teaspoon honey
Kosher salt and black pepper to taste
Gently toss all ingredients together in large bowl and season to taste.
