Well-Pict Strawberry Soup
1 pound Well-Pict strawberries, hulled
4 tsp. honey, or to desired sweetness
1/2 tbsp. mint, chopped
5 tbsp. crème fraiche
1 1/2 tbsp. lemon juice
1/4 tsp. cardamom powder
In food processor, blend strawberries, honey, mint, 1 tablespoon crème fraiche, lemon juice and cardamom powder until smooth. Transfer to large bowl and refrigerate for 2 hours. Pour soup into serving bowls and top with a dollop of crème fraiche.
