Well-Pict Strawberry Stuffed Cannoli with 3-Berry Compote

Cannoli Filling

Ingredients:
16 ounce container good quality ricotta
¼ cup miniature chocolate chips
5 tablespoons sugar
1 cup Well-Pict strawberries, cleaned and cut in small dice
6 cannoli shells from your favorite Italian Deli

Directions:
In a bowl, mix ricotta, bittersweet chocolate and 4 tablespoons sugar.

Blend in one cup diced strawberries, taste for sweetness and adjust.

Fill cannoli shells and serve with triple berry sauce.

Cannoli Filling

Ingredients:
1 six ounce clamshell Well-Pict raspberries
1 six ounce clamshell Well-Pict blackberries
2 cups sliced Well-Pict strawberries
¼ cup sugar

Directions:
Heat strawberries in a saucepan with ¼ cup sugar until sugar dissolves and strawberries are softened.

Put berries in blender and puree until smooth, then return to pan on low heat and add blackberries and raspberries.

Cook for 5 minutes, take off heat and reserve for serving with cannoli.
