Toasted Brie with Well•Pict Raspberry Salsa
1 baguette (sliced on bias, toasted with olive oil, salt, and pepper)
1/2 lb wedge of Brie cheese
12 ounces fresh Well•Pict raspberries
2 tbsp finely chopped shallots
1 tbsp chopped cilantro
1/2 tsp lime zest
½ juice of lime
1T olive oil
a good pinch of salt
Fold raspberries, shallots, cilantro, lime zest, lime juice, olive oil and salt together. Set aside.
Place slices of toasted baguette on baking sheet, top with slices of brie and place under broiler until melted. Remove from oven and top with raspberry salsa.
Party Platter Alternative: Bake brie wedges in cast iron skillet until melted, remove from oven and add raspberry salsa to the top of brie. Add toasted baguette around brie and serve.
