Well•Pict Spicy Strawberry Shrimp Cocktail
Ingredients:
For Shrimp Boil
1 pound medium shrimp
6 cups water
2 cups white wine
1 lemon, sliced
2 cloves garlic, minced
1 tbsp salt
For Strawberry Glaze
3 cups strawberry juice
2 tbsp sugar
1 tbsp red wine vinegar
4 cilantro sprigs
1 lg jalapeno, sliced
½ lime, juiced
For Strawberry Salsa
1 pound strawberries, sliced
½ small red onion, thinly sliced
½ cup loosely packed cilantro leaves
Directions:
Mix all ingredients for the strawberry glaze in a medium saucepan. Bring to a boil, then simmer over low heat, stirring occasionally, until glaze is thickened (about an hour). Remove from heat and allow to cool in refrigerator. Mix together the ingredients for the strawberry salsa in a separate bowl and set aside.
In large saucepan, boil the water, wine, garlic, lemon, and salt for the shrimp. With an ice bath nearby, boil the shrimp until cooked through and then place in an ice bath immediately. Slice shrimp lengthwise, strain, and set aside.
Toss together the shrimp, strawberry salsa, and strawberry glaze. Make sure all ingredients are well combined.
