Well•Pict Sun-Razzy Herb Salad
Ingredients:
4 cups spring mix
½ cup cilantro leaves
1 generous cup raspberries
3 tablespoons sunflower seeds
¼ cup crumbled feta cheese
1 lime, juiced thoroughly
1 tablespoon thinly sliced basil leaves
½ tablespoon thinly sliced mint leaves
3 tablespoons extra virgin olive oil
1 tablespoon honey
Kosher salt and fresh ground black pepper, to taste
Directions:
In a large salad bowl, add lime juice, fresh basil, mint, olive oil, and honey. Stir until well combined. Gently toss in spring mix, cilantro leaves, and raspberries. Season to taste with salt and pepper. Place on four serving salad plates then sprinkle on toasted sunflower seeds and feta cheese. Serve immediately.
