School (in person for many of us) is back in session, and offices and cubicles across the country are opening back up for the first time in what feels like a thousand years. Don’t misunderstand our “ugh”s; this is all great news. But, these important steps toward kinda-sorta normal life are resulting in time crunches and hectic days that feel extra whirlwindy. And extra whirlwindy days can wreak havoc on mealtimes. Extra whirlwindy days can result in… corn chips and cereal for dinner.

This make-ahead sweet (but super healthy) treat is a lifesaver on those mornings when getting out the door on time seems like the impossible dream. The prep is quick and needs at least 8 hours to set, but making it even a full 24 hours in advance is fine! You and the kids will leave the house turbo-charged due to the awesome protein power of chia seeds.
Elevate a classic by replacing the standard jarred jelly with thinly sliced fresh strawberries. PB & S for dinner? Well, we don’t see why not. Add a handful of baby carrots or sliced cucumber, and you’ve got a satisfying light meal.
