Strawberry Pinwheel Sandwiches
Makes: 6-8 servings
Ingredients:
1 sheet lavash bread
3 tablespoon cream cheese
3 tablespoon goat cheese
4 slices capicolla or prosciutto
6 thinly sliced strawberries
2 teaspoon fennel pollen or ground fennel
½ cup arugula sprouts, mung bean sprouts or micro greens
Directions:
Mix together the cream cheese and goat cheese. On long edge of lavash, spread cream
cheese mixture to half the width of the bread (this is your “glue “ to seal sandwich). Lay
capicolla or prosciutto evenly on opposite half. Top with sliced strawberries and sprinkle
berries with fennel. Top with greens, and roll towards cream cheese side very tightly. Wrap in
plastic wrap and let chill for 1 hour. Slice into pinwheels and serve.
