Well•Pict Berries Breakfast Cobbler
Ingredients:
3 cups fresh Well•Pict Raspberries
2 tbsp. coconut oil
1 egg
1 ½ cups almond meal
2 tbsp. cinnamon
2 tbsp. (approx.) slivered almonds
Drizzle of orange blossom honey
Plain or Vanilla Greek yogurt
Directions:
Preheat oven to 350°. Cover the bottom of baking dish with fresh Well•Pict Raspberries, drizzle honey over the top. Melt the coconut oil, and then in a small bowl, whisk it together with the egg.Add the almond meal and cinnamon to this mixture until well blended and crumbly (add more almond meal as needed to make the mixture crumbly). Scoop the crumble mix over the berries and add the slivered almonds on top. Bake uncovered for approx. 35 minutes. Place Greek yogurt and honey at the bottom of whatever plate or bowl you plan on serving the cobbler in, then add a scoop of the finished cobbler on top. Swap out the yogurt with vanilla ice cream or gelato to turn this breakfast cobbler into a delicious dessert.
