Well•Pict Raspberry Energy Bars
Ingredients:
2 pints raspberries
1 ½ cups old fashioned oats
1 cup, plus 2 tbsp all-purpose flour
1 cup, plus 2 tbsp brown sugar
1 cup sliced almonds
1 ½ cubes (6 oz) unsalted butter, cut into squares
3 tbsp raspberry preserves
¾ teaspoon baking powder
¼ teaspoon baking soda
Directions:
Spray a rectangular 2qt baking dish with cooking spray. Combine oats, flour, brown sugar, baking powder, and baking soda in the bowl of an electric mixer. Add the butter and mix with the paddle until it resembles coarse crumbs. Reserve 1 ½ cups of the crumb mixture and set aside. Press the remaining crumbs into the baking dish. Bake at 350 degrees until golden brown, about 20 minutes. Remove from oven and allow to cool slightly before adding the raspberry mixture.
In a separate bowl, gently coat the raspberries with the 3 tablespoons of preserves. Evenly distribute the raspberry mixture over the baked crust. Add almonds to the reserved crumb mixture, and spread evenly over the raspberries. Put the baking dish back in the oven for 25 minutes at 350 degrees, until the raspberries begin to bubble. Cool completely before cutting into bars.
